Ingredients

  • 8 oz short pasta (bow tie or rotini) Cook according to package directions and cool completely.
For the Salad
  • 2 cups fresh corn kernels Or use canned/frozen corn as substitute.
  • 1 cup cherry tomatoes Halved.
  • 1/2 cup red onion Chopped finely.
  • 1/2 cup cilantro Use both leaves and stems.
  • 1 medium avocado Diced; add just before serving.
For the Dressing
  • 1 cup Greek yogurt Opt for 0% fat version for lighter taste.
  • 1/4 cup lime juice Freshly squeezed.
  • 2 cloves garlic Whole cloves.
  • 1 tsp salt Adjust to taste.
  • 1/4 tsp cayenne pepper Add a pinch for heat.

Method
 

Make Dressing
  1. Combine Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne in a food processor. Blend until smooth, then refrigerate for a bit.
Prepare Pasta
  1. Cook your short pasta according to package instructions until al dente; drain and let it cool completely.
Prepare Ingredients
  1. Boil corn for 1½ to 2 minutes until tender, then cool. Chop cherry tomatoes, red onion, and cilantro.
Mix Salad
  1. In a large bowl, mix the cooled pasta, corn, tomatoes, onion, and cilantro. Pour the dressing over the salad and toss gently.
Serve
  1. Top the salad with diced avocado and serve immediately.
