  • 1 tablespoon Sesame oil toasted preferred
  • 1 tablespoon Sugar or honey/agave syrup

  • 1 cup Cooked shrimp or tofu
  • 2 tablespoons Sesame seeds

Method
 

Preparation Steps
  1. Wash your cucumbers thoroughly under cool water, then slice them into thin rounds or half-moons.
  2. Optional: Sprinkle salt on the sliced cucumbers and let them sit for about 10 minutes. Rinse and pat dry before using.
  3. Chop any fresh herbs you're including and set them aside.
  4. Whisk together rice vinegar, soy sauce, sesame oil, and sugar until well combined.
  5. Combine your prepared cucumbers and any optional herbs in a mixing bowl. Pour the dressing generously over the top.
  6. Toss gently to coat the cucumbers evenly, then let sit in the fridge for at least 30 minutes.
  7. Serve chilled, garnished with sesame seeds or sliced almonds if desired.
