  1. Shred the vegetables: Preparation is key! Shred the cabbage and carrot using a grater or mandoline slicer. This ensures even cooking and perfect texture in your fritters.
  2. Season the vegetables: In a large bowl, combine the shredded cabbage, carrot, chopped green onions, salt, black pepper, and Italian seasoning. Toss everything together to evenly distribute the flavors.
  3. Separate the eggs: Carefully separate the egg white from the egg yolk of each egg. You'll use them for different parts of the recipe.
  4. Combine egg white and vegetables: Add the egg whites to the seasoned vegetable mixture and stir well to combine. The egg white acts as a binder to hold the fritters together.
  5. Heat the oil: Get your pan ready by heating a thin layer of olive oil in a large skillet over medium heat.
  6. Form the fritters: Using a spoon or your hands, gently form the cabbage mixture into small, flat patties. These will be your soon-to-be crispy fritters!
  7. Fry the fritters: Carefully place the formed fritters into the hot oil. Cook them for 2-3 minutes per side, or until they're golden brown and cooked through. Keep an eye on them to ensure they don't burn.
  8. Add the egg yolk (optional): Here comes the fun part! This step is optional, but it adds a delightful runny yolk surprise to your fritters. Using a spatula, gently create a small well in the center of each cooking fritter. Carefully crack the separated egg yolk and slide it into the well of each fritter. Cover the pan with a lid and continue cooking for another 1-2 minutes. This allows the egg yolk to cook to your desired doneness.
  9. Serve: Serve your hot cabbage fritters immediately. You can enjoy them plain, with a dipping sauce of your choice like sour cream or yogurt, or add them to a sandwich or wrap for a complete and satisfying meal.
