Walking Taco Casserole

  • 1 pound lean ground beef​
  • 1 small yellow onion, diced
  • 1 packet taco seasoning (or 2 tablespoons homemade)​
  • 1 (10-ounce) can diced tomatoes with green chiles (such as Rotel), drained​
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)​
  • 3 cups crushed tortilla chips (such as Doritos or Fritos)​
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: shredded lettuce, diced tomatoes, sliced green onions, sour cream, chopped cilantro

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.​
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.​
  3. Stir in the taco seasoning, diced tomatoes with green chiles, black beans, and corn. Cook for an additional 2-3 minutes until heated through.
  4. Spread half of the crushed tortilla chips evenly in the prepared baking dish. Layer half of the beef mixture over the chips, followed by half of the shredded cheese. Repeat the layers with the remaining chips, beef mixture, and cheese.​
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.​
  6. Remove from the oven and let cool for 5 minutes. Top with your choice of optional toppings before serving.​
