Preparation
- Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the taco seasoning, diced tomatoes with green chiles, black beans, and corn. Cook for an additional 2-3 minutes until heated through.
- Spread half of the crushed tortilla chips evenly in the prepared baking dish. Layer half of the beef mixture over the chips, followed by half of the shredded cheese. Repeat the layers with the remaining chips, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for 5 minutes. Top with your choice of optional toppings before serving.
