- Prepare the Vegetables: Wash and peel the carrot and potatoes. Grate the carrot, zucchini, and potatoes using a medium-sized grater. Place the grated vegetables in a colander and press or squeeze out as much excess liquid as possible to ensure your fritters are not soggy.
- Mix the Ingredients: In a large mixing bowl, combine the grated carrot, zucchini, and potatoes. Add the chopped parsley, flour, salt, and black pepper. Stir the mixture to distribute the flour and seasoning evenly.
- Add Eggs: Crack the eggs into the bowl. Mix thoroughly until all the ingredients are well combined and the mixture holds together. The eggs will act as a binder to keep the fritters intact while cooking.
- Heat the Oil: In a large skillet, heat a generous amount of olive oil over medium heat. You'll need enough oil to lightly coat the bottom of the pan.
- Cook the Fritters: Once the oil is hot, scoop portions of the vegetable mixture into the skillet. Flatten them slightly to form patties. Fry each side for about 3-4 minutes or until golden brown and crispy. Depending on the size of your skillet, you may need to work in batches.
- Drain and Serve: Transfer the cooked fritters onto a plate lined with paper towels to drain any excess oil. Serve hot, either on their own or with a dipping sauce of your choice, such as yogurt or a light sour cream dip.
