Preparation
- Preheat: Preheat your oven to 180°C (350°F).
- Boil Vegetables: In a large pot, bring water to a boil and add 1 tablespoon of salt. Add the sliced potatoes, carrot, cauliflower, and broccoli. Cook for about 3 minutes until just tender. Drain the vegetables and set them aside to cool.
- Fry Leek: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced leek and fry for 5-7 minutes until soft.
- Cook Pepper: Add the sliced pepper and cook for an additional 2-3 minutes. Set aside.
- Whisk Eggs and Milk: In a bowl, whisk the eggs with half of the milk (200 ml).
- Add Flour: Gradually add the flour, whisking to avoid lumps.
- Add Seasonings: Stir in the remaining milk, remaining salt, black pepper, and French spices to form a smooth batter.
- Layer Vegetables: In a greased baking dish, layer the cooked potatoes, carrots, cauliflower, broccoli, leeks, and peppers.
- Pour Batter: Pour the batter over the vegetables, ensuring it spreads evenly.
- Top with Cheese: Sprinkle the grated cheese on top.
- Bake Casserole: Bake in the preheated oven for about 50 minutes, or until the top is golden and bubbly.
- Mix Dip Ingredients: In a small bowl, combine the Greek yogurt, mayonnaise, minced garlic, grated cucumber, and chopped dill. Mix well.
- Cool and Serve: Let the casserole cool slightly before serving. Serve with the yogurt cucumber dip on the side.
