Turkish Style Eggplant Recipe

Recipe card for Turkish Style Eggplant Recipe.
Course: Breakfast

Ingredients

Ingredients
  • 2 eggplants medium-sized
  • 3 onions sliced
  • 200g cherry tomatoes halved
  • 1 bell pepper sliced
  • 2 cloves of garlic minced
  • Cheese to taste, for topping—optional, feta or mozzarella works great
  • Parsley chopped, for garnish
  • Olive oil for frying and drizzling
  • Salt, pepper, and paprika to taste

Method

Preparation
  1. Prepare the Eggplants: Slice the eggplants lengthwise into halves. Score the flesh of the eggplants in a crisscross pattern without cutting through the skin. This helps the eggplant cook evenly and absorb the flavors.
  2. Sprinkle the eggplant halves with salt and let them sit for about 15 minutes. This will help remove excess moisture and reduce bitterness.
  3. After 15 minutes, pat the eggplants dry with a paper towel to remove any excess water.
  4. Cook the Eggplants: Heat some olive oil in a large pan over medium heat.
  5. Fry the eggplant halves face down until they turn golden brown and become soft. This should take about 6-8 minutes per side.
  6. Once the eggplants are cooked, remove them from the pan and set aside.
  7. Prepare the Vegetable Filling: In the same pan, add a bit more olive oil and sauté the sliced onions until they become soft and translucent.
  8. Add the minced garlic and cook for another minute, being careful not to burn it.
  9. Add the sliced bell pepper and cook for 4-5 minutes until it softens.
  10. Stir in the cherry tomatoes and cook for another 5 minutes until they start to release their juices.
  11. Season the mixture with salt, pepper, and paprika to taste.
  12. Assemble the Dish: Preheat your oven to 180°C (350°F).
  13. Place the cooked eggplants on a baking dish, cut-side up.
  14. Spoon the vegetable mixture over the eggplant halves, ensuring they are generously filled.
  15. For an added twist, sprinkle cheese on top if desired. Feta or mozzarella are great choices for a Mediterranean flavor.
  16. Bake: Drizzle a little more olive oil over the stuffed eggplants.
  17. Bake in the preheated oven for about 15-20 minutes, or until the cheese (if using) is melted and bubbly, and the vegetables are fully cooked.
  18. Garnish and Serve: Once the eggplants are done, remove them from the oven and let them cool slightly.
  19. Garnish with freshly chopped parsley and serve warm.
