Making the Bake
- Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9-inch baking dish.
- In a blender, combine the strained cottage cheese and eggs, and blend until smooth.
- In a separate bowl, mix the blended cottage cheese mixture with almond flour, sweetener, vanilla extract, lemon zest, and baking powder.
- Gently fold in your mixed berries into the batter.
- Pour the batter into your prepared baking dish, smoothing the top.
- Bake in the preheated oven for 35-40 minutes until golden brown on top.
- Let it cool for about 20-30 minutes before slicing.
