  • 2 cups Full-Fat Cottage Cheese Strained for best texture
  • 4 large Eggs
  • 1 cup Almond Flour Can be swapped with rolled oats
  • 1/4 cup Honey or Maple Syrup For natural sweetness
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Zest
  • 1 tbsp Baking Powder
  • 2 cups Mixed Berries Fresh or frozen, coated with almond flour

Method
 

Making the Bake
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9-inch baking dish.
  2. In a blender, combine the strained cottage cheese and eggs, and blend until smooth.
  3. In a separate bowl, mix the blended cottage cheese mixture with almond flour, sweetener, vanilla extract, lemon zest, and baking powder.
  4. Gently fold in your mixed berries into the batter.
  5. Pour the batter into your prepared baking dish, smoothing the top.
  6. Bake in the preheated oven for 35-40 minutes until golden brown on top.
  7. Let it cool for about 20-30 minutes before slicing.
