Transylvanian Bacon and Green Bean Soup

  • 8 oz (225g) smoked bacon, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (450g) fresh green beans, trimmed and cut into 1-inch pieces
  • 5 cups (1.2L) chicken stock or vegetable stock
  • 1 tablespoon paprika
  • 2 tablespoons all-purpose flour
  • 1/2 cup sour cream
  • 2 tablespoons vinegar white or apple cider
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh dill optional

Method
 

Preparation
  1. In a large soup pot, cook the diced bacon over medium heat until crisp. Remove half of the bacon and set aside for garnish.
  2. Add the chopped onion to the remaining bacon and fat in the pot. Sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and paprika, cooking for another 30 seconds.
  4. Sprinkle the flour over the mixture and stir constantly for 1-2 minutes to form a roux.
  5. Gradually whisk in the chicken stock to avoid lumps.
  6. Add the green beans and bring the soup to a boil. Reduce the heat and let it simmer for 20-25 minutes, until beans are tender.
  7. In a small bowl, mix the sour cream with a few tablespoons of hot soup broth to temper it, then stir it back into the soup.
  8. Add vinegar, season with salt and pepper, and cook for another 5 minutes.
  9. Serve hot, garnished with the reserved crispy bacon and fresh dill if desired.
