- Shred the vegetables: Prepare your base! Shred the cabbage and carrot using your preferred method. A grater, mandoline slicer, or even a food processor with the shredding attachment will all work perfectly.
- Sauté the vegetables (optional): This step adds a touch of softness to the vegetables. Heat a pan over medium heat and add a drizzle of oil or butter (if using). Sauté the shredded vegetables for a few minutes, until slightly softened. Season with a pinch of salt and pepper. Skip this step if you prefer a more scrambled egg texture.
- Whisk the eggs: In a bowl, whisk together your eggs with a pinch of salt and pepper. This incorporates air into the eggs, making them light and fluffy when cooked.
- Cook the eggs: Pour the whisked eggs into the pan with the vegetables (or directly into the pan if you skipped sauteing). Let the eggs cook undisturbed for a minute or two, allowing them to start setting at the edges.
- Scramble the eggs: Using a spatula, gently break up the cooked egg and continue scrambling it until cooked through to your desired doneness.
- Serve: Serve your hot and delicious cabbage and carrot scramble immediately. Enjoy it on its own, with a slice of toast for dipping, or wrapped in a warm tortilla for a grab-and-go breakfast.
