Method

How to Make Tom Kha Gai Soup
  1. Prepare Aromatics: Slice the galangal, crush the lemongrass, and tear the kaffir lime leaves. Combine these in a pot with chicken stock and simmer for about 10 minutes until fragrant.
  2. Add Protein and Vegetables: Gently stir in the chicken slices, cooking until they turn tender and white. Add the mushrooms and optional cherry tomatoes, allowing them to soften for around 5 minutes.
  3. Combine Coconut Milk and Seasoning: Pour in the creamy coconut milk, followed by fish sauce, fresh lime juice, and crushed Thai chilies. Stir well and let simmer on low for an additional 5 minutes.
  4. Finish and Serve: Remove from heat, garnish with fresh cilantro and lime wedges, and serve hot.
