- Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s ready for baking.
- Prepare the Batter: In a mixing bowl, beat 3 eggs with a pinch of salt until frothy. The salt enhances the flavors and the frothy eggs help create a light texture.
- Add 12 tablespoons of sugar and continue beating until the mixture is creamy. This step dissolves the sugar and incorporates air, contributing to the cake's lightness.
- Gradually add 12 tablespoons of oil and 12 tablespoons of milk, mixing well after each addition. The oil adds moisture, while the milk helps create a smooth batter.
- Add the zest of 1 lemon and the juice of 1/2 lemon to the mixture and stir well. The lemon zest and juice provide a fresh, tangy flavor.
- Gradually add 12 tablespoons of flour and 2 teaspoons (10g) of baking powder to the mixture. Mix until well combined and smooth. The flour provides structure, while the baking powder helps the cake rise.
- Bake: Grease and flour a 20cm (8-inch) cake mold to prevent the cake from sticking.
- Pour the batter into the prepared mold, ensuring it is evenly distributed.
