  • 1 pound large shrimp, peeled and deveined
For the Sauce
  • 1/2 cup sweet chili sauce try homemade for a fresh twist
  • 2 tablespoons soy sauce opt for low-sodium
  • 1 tablespoon sesame oil olive oil can substitute
  • 2 cloves garlic, minced fresh is best
  • 1 teaspoon fresh ginger, grated ground ginger works too
For Cooking
  • 2 tablespoons vegetable oil canola or grapeseed is ideal
For Garnish
  • 2 tablespoons green onions, chopped or cilantro
  • 1 tablespoon sesame seeds optional
For Serving
  • 4 cups cooked rice or noodles your favorite type

Method
 

How to Make Sweet Chili Shrimp
  1. Rinse and pat the shrimp dry with paper towels to remove excess moisture.
  2. In a medium bowl, whisk together sweet chili sauce, soy sauce, sesame oil, minced garlic, and freshly grated ginger.
  3. In a large skillet or wok, heat vegetable oil over medium-high heat until it shimmers.
  4. Add the shrimp in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes until they turn pink and opaque; flip halfway through.
  5. Once the shrimp are cooked, pour the prepared sauce over them. Toss gently to coat evenly and let it cook for another 2-3 minutes.
  6. Make sure the shrimp reach a safe internal temperature of 120°F (49°C).
  7. Remove from heat and sprinkle chopped green onions and sesame seeds on top for an eye-catching finish.
  8. Serve the Sweet Chili Shrimp immediately over your choice of cooked rice or noodles.
