- Wash and grate the zucchini. Squeeze out as much liquid as possible using a clean towel or cheesecloth.
- In a mixing bowl, combine the grated zucchini with eggs, flour, breadcrumbs, salt, and black pepper. Mix until a batter forms.
- Preheat a non-stick pan with vegetable oil over medium heat.
- Take a heaping tablespoon of the zucchini batter and flatten it slightly in the pan.
- Place a slice of zucchini, a slice of ham, and a slice of cheese on top of the batter in the pan.
- Add another spoonful of batter over the filling and gently press to seal the edges.
- Fry each fritter for about 2–3 minutes on each side, or until golden brown and crispy.
- Remove from the pan and drain on paper towels.
- Serve warm with a dipping sauce of your choice (e.g., garlic yogurt or tomato relish).
