Stuffed Zucchini Fritters with Ham & Cheese

  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 100 g breadcrumbs about 1 cup
  • 1 medium zucchini (tsukkini), grated
  • Salt, to taste
  • Black pepper, to taste
  • Vegetable oil, for frying
  • 6–8 thin zucchini slices for layering/filling
  • 6–8 slices of ham or cut into smaller pieces to fit
  • 6–8 slices of cheese such as mozzarella or cheddar

Method
 

Preparation
  1. Wash and grate the zucchini. Squeeze out as much liquid as possible using a clean towel or cheesecloth.
  2. In a mixing bowl, combine the grated zucchini with eggs, flour, breadcrumbs, salt, and black pepper. Mix until a batter forms.
  3. Preheat a non-stick pan with vegetable oil over medium heat.
  4. Take a heaping tablespoon of the zucchini batter and flatten it slightly in the pan.
  5. Place a slice of zucchini, a slice of ham, and a slice of cheese on top of the batter in the pan.
  6. Add another spoonful of batter over the filling and gently press to seal the edges.
  7. Fry each fritter for about 2–3 minutes on each side, or until golden brown and crispy.
  8. Remove from the pan and drain on paper towels.
  9. Serve warm with a dipping sauce of your choice (e.g., garlic yogurt or tomato relish).
