Ingredients
  

For the Dressing
  • 8 oz Cream Cheese use room temperature for easier mixing
  • 1 cup Sour Cream can substitute with Greek yogurt
  • 1/4 cup Extra Virgin Olive Oil can be replaced with avocado oil
  • 2 cloves Garlic use minced fresh garlic or garlic powder
  • 1/4 cup Chives green onions can be a suitable replacement
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Cotija/Feta Cheese can substitute with goat cheese
For the Pasta Salad
  • 1 lb Short Pasta use gluten-free pasta option if needed
  • 4 cups Romaine Lettuce any leafy green can be used
  • 2 cups Fresh Corn from 3-4 ears, grilled or roasted
  • 1/4 cup Basil any preferred herbs could be swapped
  • 1/4 cup Cilantro
  • 1 cup Spicy Cheddar Cheese regular cheddar can be substituted
  • 1 medium Avocado dice right before serving
For the Chili Butter
  • 1/2 cup Salted Butter can use unsalted for salt control
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • to taste Cayenne Pepper
For the Lime Mayo Dressing
  • 1/2 cup Mayonnaise/Yogurt can choose light or dairy-free options
  • 2 Tbsp Lime Juice essential for zest

Method
 

Preparation
  1. In a large bowl, combine softened cream cheese, sour cream, olive oil, minced garlic, chopped chives, salt, pepper, and crumbled Cotija cheese. Mix until smooth and creamy.
  2. Bring a pot of salted water to a boil. Add the short pasta and cook until al dente, about 8-10 minutes. Drain and toss the pasta with the dressing while it's still warm.
  3. Gently fold in the shredded romaine lettuce, charred or fresh corn, chopped basil, cilantro, spicy cheddar, and diced avocado into the pasta mixture.
  4. In a skillet, melt the salted butter over medium heat. Stir in smoked paprika, chili powder, and cayenne pepper, cooking until fragrant.
  5. In a small bowl, whisk together mayonnaise or yogurt with fresh lime juice and a pinch of salt until well-blended.
  6. Serve the pasta salad warm or chilled, drizzling the lime mayo dressing and topping with chili butter.
