Making the Pie
- In a large bowl, mix together the all-purpose flour, granulated sugar, and salt. Using cold butter, cut it into the mixture until it resembles coarse crumbs. Gradually add ice water, mixing until the dough forms. Chill for 30 minutes.
- If using fresh strawberries, combine them with a little sugar and gently mash them to release their juices. If you're opting for jam, simply set it aside.
- Roll out half the chilled dough on a floured surface, then fit it into a baking dish. Spoon the strawberry filling evenly over the dough. Roll out the remaining dough, place it over the filling, and seal the edges by crimping with a fork.
- Preheat your oven to 375°F (190°C). Bake for 25-30 minutes, until the crust is golden brown and flaky. Allow the pie to cool slightly, then drizzle with a glaze made from powdered sugar, milk, and vanilla extract, and finish off with rainbow sprinkles.
