- Prepare the Leeks: Start by washing the 6 leeks thoroughly to remove any dirt or sand trapped between the layers. Cut them into 2-inch pieces, separating the white and green parts.
- Heat the Oil: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Stir Fry the Leeks: Add the white parts of the leeks first, stir-frying for about 2-3 minutes until they start to soften. Then add the green parts of the leeks, continuing to stir-fry for another 1-2 minutes. The leeks should be slightly tender but still retain some crispness.
- Add the Sauces: Stir in 1 tablespoon of oyster sauce and 1 teaspoon of light soy sauce. Toss the leeks well to coat them evenly in the sauces. Stir-fry for another 1-2 minutes until everything is well combined and heated through.
- Finish with Sesame Oil: Drizzle a dash of sesame seed oil over the leeks just before removing them from the heat. This will add a fragrant, nutty aroma to the dish.
- Serve: Transfer the stir-fried leeks to a serving plate. This dish can be enjoyed on its own or as a side dish with steamed rice or noodles.
