How to Make Jalapeño Popper Cheesy Chicken Enchiladas
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, combine the shredded chicken, cream cheese, cheddar cheese, and diced jalapeños. Stir until fully blended.
- Spread a layer of creamy enchilada sauce in the bottom of the prepared baking dish.
- Spoon the chicken mixture into each tortilla, roll tightly, and place seam-side down in the baking dish.
- Top the enchiladas with the remaining enchilada sauce and sprinkle with extra cheese.
- Bake for about 25 minutes, or until bubbly and golden brown.
