Spam Tofu Stew

  • 300g tofu, cut into squares
  • 300g Spam, cut into pieces
  • Half an onion, sliced
  • A handful of green onions, chopped
  • 1 slice of cheddar cheese
  • Chili pepper (optional), sliced
  • 300ml water

  1. Mix the Seasonings: In a small bowl, combine 8g soy sauce, 12g Gochujang, 12g Doenjang, 5g red pepper powder, and 9g minced garlic. Add 3 tablespoons of water to thin out the mixture and stir well until all ingredients are fully incorporated. Set this seasoning mixture aside for later.
  2. Layer the Pot: Start by placing half an onion, sliced, flat on the bottom of a casserole pot (approximately 20cm in diameter). This will serve as the base layer, adding flavor to the stew.
  3. Add Green Onions: Scatter the chopped green onions over the onion slices in the pot, adding a fresh, aromatic layer to the stew.
  4. Pour the Seasoning Mixture: Evenly distribute the prepared seasoning mixture over the onions and green onions in the pot. This will ensure that all the ingredients are well-seasoned.
  5. Arrange Ingredients: Place the tofu squares and Spam pieces in the pot, alternating them to create an even distribution. This layering helps to ensure that every bite is packed with flavor.
  6. Top with Cheese: Lay a slice of cheddar cheese on top of the tofu and Spam mixture. As it cooks, the cheese will melt into the stew, adding richness and a creamy texture.
  7. Optional Spiciness: If you like a bit of heat, sprinkle sliced chili pepper over the top. This will infuse the stew with a spicy kick.
  8. Pour Water: Carefully add 300ml of water to the pot, making sure it covers the ingredients. This will form the base of the stew and allow the flavors to meld together.
  9. Bring to Boil: Place the pot over medium heat and bring it to a boil.
  10. Reduce Heat: Once the stew is boiling, reduce the heat to low. Let it simmer for about 15 minutes. This allows the flavors to develop and the tofu and Spam to cook through. The stew will thicken slightly as it cooks.
  11. Garnish: If desired, garnish the stew with additional chopped green onions for a fresh touch.
  12. Serve Hot: Enjoy the stew hot, preferably with a side of steamed rice to soak up the delicious broth.
