  • 3 large eggs, at room temperature
  • 1 cup whole milk
  • 1/2 cup neutral vegetable oil such as corn or canola
  • 1 1/2 cups granulated sugar
  • 2 cups all-purpose flour, sifted
  • 1 tablespoon baking powder
  • 1 teaspoon pure vanilla extract
  • A pinch of salt

Preparation
  1. Preheat and Prep: Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan or a medium rectangular baking dish with butter and a light dusting of flour to ensure the cake releases easily.
  2. Blend the Liquids: In a high-speed blender, combine the eggs, milk, vegetable oil, sugar, and vanilla extract. Blend on medium speed for about 2 minutes until the mixture is pale, smooth, and slightly frothy.
  3. Incorporate Dry Ingredients: Add the sifted flour and salt to the blender. Pulse the blender a few times just until the flour is incorporated. Do not over-blend at this stage, as over-mixing can make the cake dense rather than fluffy.
  4. Add the Leavening: Add the baking powder and pulse one or two more times to distribute it evenly throughout the batter.
  5. Bake: Pour the smooth batter into your prepared pan. Place it in the center of the oven and bake for 35 to 40 minutes. The cake is ready when a toothpick inserted into the center comes out clean.
  6. Cool: Remove the cake from the oven and let it rest in the pan for 15 minutes before transferring it to a wire rack to cool completely.
