  • 1 small onion, finely diced Shallots can be used as a milder substitute.
  • 2 cloves garlic, minced Adjust quantity to taste or use garlic powder.
  • 2 large eggs Can substitute with flaxseed or chia egg for egg-free version.
  • 1/2 cup breadcrumbs Gluten-free breadcrumbs can be used.
  • 2 tbsp Worcestershire sauce Soy sauce can serve as a similar alternative.
  • salt and pepper to taste
  • Fresh parsley Optional for garnish.

How to Make Swiss Bacon Mushroom Meatloaf
  1. Preheat the oven to 375°F (190°C). Prepare a loaf pan or line a baking sheet with foil.
  2. Crisp the chopped bacon in a skillet until browned. Remove the bacon, but reserve the rendered fat. Sauté the sliced mushrooms in the bacon fat until golden.
  3. In a large bowl, combine the ground beef, eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently.
  4. Shape the mixture into a loaf on the prepared pan. Press Swiss cheese into the center, then top with sautéed mushrooms and crumbled bacon.
  5. Place the loaf in the oven and cook for 45–55 minutes. Ensure an internal temperature of 160°F (71°C). Let rest for 10 minutes before slicing.
  6. Before serving, drizzle with pan juices and optionally garnish with fresh parsley.
