- Preheat the Oven: Start by preheating your oven to 180°C (360°F) to ensure it reaches the correct temperature before baking.
- Prepare the Dry Ingredients: In a large mixing bowl, combine 1 cup of oatmeal, 1 teaspoon of salt, 1 teaspoon of dry garlic, and 1 teaspoon of Italian herbs. Mix thoroughly to ensure all the dry ingredients are well-distributed.
- Mix in the Wet Ingredients: Add 1 cup of cottage cheese, ½ cup of shredded mozzarella cheese, and 3 eggs to the dry mixture. Stir until all ingredients are fully combined into a thick batter.
- Incorporate Vegetables and Oil: Stir in 1 tablespoon of avocado oil, 1 cup of chopped arugula, 2 finely chopped green onions, and 1 cup of halved cherry tomatoes. Mix until the vegetables are evenly distributed throughout the batter.
- Fill the Muffin Tin: Spoon the mixture into a muffin tin lined with paper liners or greased with a little oil. Fill each muffin cup to about three-quarters full to allow room for the muffins to rise.
- Add the Toppings: Sprinkle the top of each muffin with ½ cup of grated Parmesan cheese, ½ cup of shredded mozzarella cheese, and a pinch of Italian herbs. This will create a flavorful, cheesy topping as the muffins bake.
- Bake: Place the muffin tin in the preheated oven and bake for about 30 minutes. The muffins are ready when they turn golden brown, and a toothpick inserted into the center comes out clean.
