  • 4 large eggs binding agent
  • 1 large onion finely chopped
  • 2 tablespoons parsley chopped, optional
  • 2 teaspoons salt
  • 0.5 teaspoon black pepper adjust to taste
  • 0.67 cup oatmeal or rolled oats
  • 1 cup Italian breadcrumbs
  • 1 cup finely shredded carrots
  • 1 cup finely shredded celery
  • 6 tablespoons ketchup for moisture
For the Tomato Beef Sauce
  • 0.33 cup ketchup
  • 1 can beef consommé (10.5 oz), or vegetable broth
  • 0.5 teaspoon dried basil or fresh if available
  • 1 tablespoon cornstarch or flour
  • hot sauce optional drops for heat

Method
 

Preparation
  1. In a large mixing bowl, gently mix together the chopped meat, eggs, onion, parsley, salt, black pepper, oatmeal, breadcrumbs, carrots, celery, and ketchup until just combined.
  2. Form the mixture into a loaf shape and place it on a baking dish or parchment-lined baking sheet.
  3. Bake in a preheated oven at 350°F (175°C) for 1 hour, until the internal temperature reaches 160°F (70°C).
  4. While the meatloaf is baking, whisk together the ketchup and cornstarch in a microwave-safe cup. Add the beef consommé and dried basil, stirring to combine. Microwave for 3 minutes, stirring halfway through.
  5. Pour the savory tomato beef sauce over the meatloaf evenly and bake for an additional 30 minutes uncovered.
  6. Let the meatloaf rest for 10 minutes before slicing. Serve warm with sides.
