Chicken
  • 1 pound Chicken Breast Cut into bite-sized pieces.
  • 3 cloves Minced Garlic Fresh is best.
  • 1 tablespoon Ginger Fresh ginger gives the best flavor.
  • 1/2 teaspoon Ground Pepper Adjust according to taste.
Thickening Agent
  • 1 tablespoon Cornstarch Arrowroot powder can be substituted.

Method
 

Preparation
  1. Soak your wooden skewers in water for about 10 to 20 minutes.
  2. In a mixing bowl, combine soy sauce, water, red wine or mirin, brown sugar, and vinegar; stir until sugar dissolves.
  3. Mix minced garlic, ginger, and ground pepper; use 1/4 cup of the sauce to marinate the chicken for at least 10 minutes.
  4. Heat the remaining sauce in a saucepan until boiling; mix cornstarch with 2 tablespoons of boiling sauce, then stir into the saucepan until thickened.
  5. Thread marinated chicken onto soaked skewers and grill over medium-high heat for 8 to 12 minutes, basting with thickened sauce.
