  • 1 pound Ground Beef Lean beef recommended
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 teaspoon Cumin
  • 1 tablespoon Chili Powder Adjust to taste
For Assembly
  • 8 pieces Tortillas Corn or flour, lightly fried
  • 2 cups Enchilada Sauce Store-bought or homemade
  • 2 cups Shredded Cheese Mix of cheddar and Monterey Jack

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef with the diced onion for about 5-7 minutes until the onion is translucent.
  3. Stir in the minced garlic, cumin, and chili powder; cook for an additional minute until fragrant.
  4. Spoon the beef mixture onto the center of each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce generously over the rolled tortillas and sprinkle shredded cheese on top.
  6. Bake uncovered for 20-25 minutes, until the cheese is bubbly and golden brown.
  7. Let cool for a couple of minutes before serving. Top with fresh cilantro or jalapeños if desired.
