  • 1/4 cup Bourbon or extra peach preserves for non-alcoholic
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Dijon Coarse Ground Mustard or yellow mustard
  • 2 cloves Garlic (minced)
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes optional
For the Salmon and Peaches
  • 4 pieces Salmon Filets with skin on
  • 2 pieces Peaches freshly sliced
  • 1/4 cup Parsley for garnish

Instructions
  1. Mix the Marinade: In a bowl, combine peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, mustard, garlic, salt, black pepper, and red pepper flakes until well blended. Reserve half for later.
  2. Marinate the Salmon: Place salmon filets in a plastic bag, pour in the remaining marinade, seal it tightly, and let it marinate in the refrigerator for 30 minutes to 1 hour for maximum flavor.
  3. Preheat the Oven: Preheat your oven to 375°F.
  4. Sear the Salmon: Heat oil in an oven-safe skillet over medium-high heat. Sear the salmon filets skin-side up for 2-3 minutes until golden brown.
  5. Add Peaches: Flip the filets skin-side down, add sliced peaches around them, and sear for an additional 2-3 minutes.
  6. Pour the Marinade: Drizzle the reserved marinade over both the salmon and peaches.
  7. Bake to Perfection: Transfer the skillet to the oven and bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F.
  8. Optional: Garnish with fresh parsley before serving.
