- Start by finely chopping the parsley, garlic, and Fresno pepper by hand.
- In a mixing bowl, combine the chopped parsley, garlic, Fresno pepper, oregano, salt, pepper, olive oil, and red wine vinegar. Mix well and let sit for at least 1 hour.
- Peel and devein the shrimp. Toss them in a bowl with olive oil, garlic, honey, smoked paprika, salt, and pepper. Let marinate for 20 minutes.
- Heat a pan over high heat. Place the marinated shrimp in a single layer and cook for 2-3 minutes on each side.
- Serve the shrimp on a dish and drizzle generously with chimichurri sauce. Serve extra chimichurri on the side.
