Ingredients
  

Chimichurri Sauce
  • 1 cup fresh parsley chopped
  • 2 cloves garlic minced
  • 1 medium Fresno pepper finely minced
  • 1 teaspoon dried oregano
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper
Shrimp
  • 1 pound jumbo shrimp peeled and deveined
  • 1 tablespoon honey opt for light varieties
  • 1 teaspoon smoked paprika

Method
 

Preparation
  1. Start by finely chopping the parsley, garlic, and Fresno pepper by hand.
  2. In a mixing bowl, combine the chopped parsley, garlic, Fresno pepper, oregano, salt, pepper, olive oil, and red wine vinegar. Mix well and let sit for at least 1 hour.
  3. Peel and devein the shrimp. Toss them in a bowl with olive oil, garlic, honey, smoked paprika, salt, and pepper. Let marinate for 20 minutes.
  4. Heat a pan over high heat. Place the marinated shrimp in a single layer and cook for 2-3 minutes on each side.
  5. Serve the shrimp on a dish and drizzle generously with chimichurri sauce. Serve extra chimichurri on the side.
