Ingredients
  

For the Sliders
  • 200 grams Paneer Haldiram or Amul for best texture
  • 1 cup Corn Kernels Roasted
  • 1 medium Onion Finely chopped
  • 3 cloves Garlic Minced
  • 1 medium Jalapeño Finely chopped
  • 1 medium Bell Pepper Any variety
  • 2 stalks Scallions Finely chopped
  • to taste Spices (salt, pepper, sugar, paprika, cumin, coriander, nutmeg, oregano, chili flakes, cinnamon) Adjust to your preference
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Mexican Hot Sauce
  • 1/2 cup Mayonnaise
  • 2 cups Shredded Slaw Mix Pre-packaged
  • 1/4 cup Coriander Chutney For topping
  • 1 cup Cheese (Mozzarella, Cheddar, Pepper Jack) Mixed for melting properties
  • 8 pieces Slider Buns Savory options preferred
For the Topping
  • 2 tablespoons Unsalted Butter For the butter mixture
  • 1 tablespoon Everything Bagel Seasoning
  • 1 tablespoon Hot Sauce
  • 1 teaspoon Sugar
  • 1 medium Jalapeño Slices For garnish

Method
 

Preparation
  1. In a small bowl, combine the mayonnaise and Mexican hot sauce until well blended. Set aside.
  2. In a large bowl, combine paneer, corn kernels, jalapeño, onions, bell peppers, scallions, minced garlic, and spices. Stir in tomato paste and hot sauce until well coated.
  3. Preheat the oven to 350°F (175°C).
  4. Slice slider buns horizontally and spread spicy sauce on each half. Layer with slaw, sprinkle cheese, then add coated paneer mixture. Finish with cheese and drizzle coriander chutney.
  5. Sandwich the top buns on each slider and poke holes with toothpick.
  6. Melt butter and mix with everything bagel seasoning, hot sauce, and sugar. Pour over sliders and place jalapeño on top.
  7. Cover sliders with foil and bake for 30-35 minutes. Rest for 3-5 minutes before serving.
