- Cut the Pork Fillet: Begin by cutting the pork fillet into thick pieces, approximately 1-inch thick. Season each piece generously with salt, black pepper, and paprika on both sides. Set aside to let the spices marinate the meat while you prepare the vegetables.
- Chop the Onions: Finely chop 3 medium onions.
- Heat Oil: Heat a generous amount of vegetable oil in a large pan over medium heat. Once the oil is hot, add the onions and sauté them until they turn a golden brown color, about 5-7 minutes.
- Add Bell Peppers: While the onions are cooking, cut 2 bell peppers into strips. Add them to the pan with the onions once the onions are almost caramelized. Stir everything together and sauté for another 3-5 minutes until the peppers begin to soften.
- Chop and Roast the Chili Pepper: Chop 1 chili pepper and add it to the pan. Continue to stir-fry everything together. Season the mixture with salt, black pepper, and 1 tablespoon of sugar.
- Caramelize with Balsamic Vinegar: Add 1 tablespoon of creamy balsamic vinegar to the pan and stir everything together. Let the sugar and vinegar caramelize, forming a rich, sweet glaze over the onions and peppers. Continue cooking until the mixture is fully caramelized and fragrant, then remove from heat.
- Slice the Baguette: Cut the baguette into slices, about 1 inch thick. Drizzle each slice with olive oil on both sides.
- Toast the Baguette: Heat a separate pan over medium heat and toast the baguette slices until golden brown on both sides. You can do this in batches if necessary.
- Rub with Garlic: After toasting, rub each piece of baguette with a clove of garlic to infuse the bread with a subtle garlic flavor.
- Sear the Meat: In the same pan used for the vegetables, heat a little more vegetable oil over high heat. Add the pork fillet pieces and sear them on both sides until golden brown, about 3-4 minutes per side. The aim is to get a nice crust on the outside while keeping the inside juicy and tender.
- Add Butter and Herbs: Lower the heat slightly and add 1 tablespoon of butter, along with 4 cloves of garlic (minced) and a sprig each of thyme and rosemary. Baste the pork with the melted butter and herbs for additional flavor. Cook for another 5-6 minutes, ensuring the pork is cooked through but still tender.
- Remove the Meat: Once cooked, remove the pork fillet from the pan and let it rest for a few minutes before serving.
- Arrange the Side Dish: On a serving plate, arrange the caramelized onions and pepper mixture as a bed for the pork.
- Add the Pork Fillet: Place the seared pork fillet pieces on top of the vegetables.
- Add the Baguette: Place the garlic-toasted baguette slices on the side of the dish, ensuring they are warm and ready to soak up the juices from the pork and vegetables.
- Serve: Drizzle the remaining meat juices from the pan over the pork fillet and garnish with fresh herbs if desired. Serve immediately.
