Sautéed Cabbage and Vegetable Medley

  • 1/2 cabbage, shredded
  • 1 red bell pepper, chopped
  • Olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 170g (5.9 oz) green corn canned or fresh
  • 170g (5.9 oz) peas canned or fresh

Method
 

Preparation
  1. Shred the cabbage.
  2. Chop the red bell pepper and onion.
  3. Mince the garlic.
  4. Chop the tomatoes.
  5. In a large pan, heat a generous drizzle of olive oil over medium heat.
  6. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  7. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  8. Add the chopped red bell pepper and shredded cabbage to the pan.
  9. Cook, stirring occasionally, for about 5-7 minutes until the vegetables start to soften.
  10. Add the chopped tomatoes to the pan.
  11. Season with salt and black pepper to taste.
  12. Stir well and cook for another 3-4 minutes.
  13. Stir in the green corn and peas.
  14. Continue to cook for an additional 5 minutes, stirring occasionally, until all the vegetables are tender and well combined.
  15. Once everything is cooked through, remove from heat.
  16. Serve hot as a main dish or as a side.
