Pumpkin Soup

  • 1 small pumpkin (about 1 kg), peeled, seeded, and cubed
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 carrot, peeled and chopped
  • 1 potato, peeled and chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk or cream for a richer taste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish
  • Pumpkin seeds, for garnish optional

Preparation
  1. Prepare the Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and fragrant, about 5 minutes.
  2. Cook the Vegetables: Add the cubed pumpkin, carrot, and potato to the pot. Stir to combine with the onions and garlic. Cook for another 5 minutes, stirring occasionally.
  3. Add the Broth and Spices: Pour in the vegetable broth, ensuring that the vegetables are fully submerged. Add the ground cumin and nutmeg. Season with salt and pepper to taste.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the vegetables are tender and easily pierced with a fork.
  5. Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a countertop blender. Be careful when blending hot liquids.
  6. Add the Coconut Milk: Stir in the coconut milk (or cream) and let the soup simmer for an additional 5 minutes to heat through and combine the flavors.
  7. Serve: Ladle the soup into bowls and garnish with fresh parsley or cilantro and pumpkin seeds, if using. Serve hot.
