  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground anise
  • 1 pinch of salt
  • 1/2 cup piloncillo (or dark brown sugar), grated
  • 1/4 cup water
  • 2 tablespoons unsalted butter
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a saucepan, combine grated piloncillo with water and butter. Heat over low heat, stirring constantly, until the piloncillo dissolves. Let it cool slightly.
  3. In a large bowl, sift together flour, baking powder, baking soda, cinnamon, anise, and salt.
  4. In a separate bowl, mix the egg, milk, and vanilla extract. Add the piloncillo syrup and stir to combine.
  5. Gradually incorporate the dry ingredients into the wet ingredients, forming a soft dough.
  6. Roll the dough out on a floured surface to about 1/4-inch thickness.
  7. Use a pig-shaped cookie cutter to cut out cookies and place them on the prepared tray.
  8. Bake for 10–12 minutes or until golden and set. Let them cool on a wire rack.
