  • Green onions, chopped, to taste
  • 4 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • Oil for frying

  1. Prepare Potatoes: Peel and grate the potatoes.
  2. Place them in a colander and squeeze out as much liquid as possible. This step is crucial to avoid soggy pancakes.
  3. Mix Ingredients: In a large mixing bowl, combine the grated potatoes, grated cheese, and chopped green onions.
  4. Add the egg, flour, and baking powder. Season with salt and freshly ground black pepper.
  5. Stir the mixture until all ingredients are well incorporated.
  6. Heat Oil: Heat oil in a large frying pan over medium heat. Ensure the oil is hot enough that a drop of the batter sizzles upon contact.
  7. Cook Pancakes: Spoon a heaping tablespoon of the potato mixture into the hot oil for each pancake.
  8. Flatten the mixture slightly with the back of the spoon to form a pancake shape.
  9. Cook for about 3-4 minutes on each side, or until the pancakes are golden brown and crispy.
  10. Serve: Serve the pancakes hot, either alone or with a side of sour cream or a fresh salad for a light meal.
