- Peel and boil the potatoes until fork-tender, then mash them in a large bowl until smooth.
- Mix in shredded mozzarella (or cheddar), Parmesan, parsley, garlic powder, paprika, salt, and pepper. Stir until well combined.
- Shape the mixture into small bite-sized balls or oval pieces.
- Dip each piece into the beaten egg, then roll in breadcrumbs until fully coated.
- Heat oil in a frying pan over medium heat and fry potato bites until golden brown and crispy, about 3–4 minutes per side. Alternatively, bake them at 200°C (400°F) for 15–18 minutes, flipping halfway for even crispiness.
- Remove and place on a paper towel to drain excess oil. Serve hot with your favorite dipping sauce.
