Potato Bites

  • 3 large potatoes (about 600 g), peeled and boiled
  • 1 cup (100 g) shredded mozzarella or cheddar cheese
  • 2 tbsp Parmesan cheese, grated
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 egg, lightly beaten
  • ½ cup (60 g) breadcrumbs
  • Salt and black pepper, to taste
  • Oil for frying or brushing if baking

Method
 

Preparation
  1. Peel and boil the potatoes until fork-tender, then mash them in a large bowl until smooth.
  2. Mix in shredded mozzarella (or cheddar), Parmesan, parsley, garlic powder, paprika, salt, and pepper. Stir until well combined.
  3. Shape the mixture into small bite-sized balls or oval pieces.
  4. Dip each piece into the beaten egg, then roll in breadcrumbs until fully coated.
  5. Heat oil in a frying pan over medium heat and fry potato bites until golden brown and crispy, about 3–4 minutes per side. Alternatively, bake them at 200°C (400°F) for 15–18 minutes, flipping halfway for even crispiness.
  6. Remove and place on a paper towel to drain excess oil. Serve hot with your favorite dipping sauce.
