- Prepare the Potatoes: Start by peeling and dicing the potatoes into bite-sized pieces. This ensures they cook evenly and absorb all the delicious flavors of the other ingredients. Place the diced potatoes into a pot of boiling water with a pinch of salt. Cook for about 10-12 minutes, or until the potatoes are just tender. Be careful not to overcook them; you want them to hold their shape.
- Sauté the Onion: While the potatoes are cooking, heat a generous drizzle of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent and slightly golden, which should take about 5 minutes. This step caramelizes the onion, bringing out its natural sweetness and adding depth to the dish.
- Combine Ingredients: Once the potatoes are cooked, drain them well and add them to the skillet with the onions. Stir gently to coat the potatoes with the oil and onions. Add the grated carrot to the mix, and continue to sauté for another 3-4 minutes, allowing the carrot to soften slightly while retaining some of its crunch.
- Add the Eggs: Finally, fold in the chopped boiled eggs. The eggs will add a creamy texture to the dish as they mix with the warm potatoes and veggies. Season the entire mixture with the tablespoon of salt, and if you like, a bit of black pepper or your favorite herbs for extra flavor.
- Serve: Transfer the potato and veggie mixture to a serving dish and garnish with a sprinkle of fresh herbs like parsley or dill if desired. Serve warm as a side dish with grilled meats, or enjoy it as a light vegetarian meal on its own.
