- Prepare the Batter: In a large bowl, combine the grated potatoes and chopped leek. Add the eggs and kefir (or yogurt), and mix until well combined.
- Dry Ingredients: Sift together the wheat flour and baking powder. Season with salt, pepper, and paprika. Gradually add this dry mixture to the potato-leek mixture, stirring continuously until the batter is smooth.
- Add Cheese: Fold in the grated cheese into the batter according to your preference for cheesiness.
- Heat the Oil: In a large skillet, heat a generous amount of oil over medium heat. The oil should be hot enough to sizzle when a small amount of batter is dropped in.
- Cook the Pancakes: Ladle about 1/4 cup of the batter into the skillet for each pancake. Flatten the batter slightly to form round shapes. Fry for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat to medium to avoid burning.
- Serve: Transfer the cooked pancakes to a paper towel-lined plate to drain excess oil. Garnish with chopped chives and serve warm. These pancakes are delicious on their own or paired with sour cream or extra cheese.
