  • Breadcrumbs for coating
  • Parmesan cheese 1 tablespoon, finely grated
  • Basil chopped, to taste
  • Vegetable oil for frying

  1. Prepare the Potatoes: Begin by peeling the potatoes and grating them finely. The finer the grating, the more uniform the fritters will be.
  2. Once grated, place the potatoes in a large bowl of cold water. This step helps to remove excess starch from the potatoes, which will contribute to a crispier fritter. Allow the potatoes to soak for about 10 minutes.
  3. Drain and Dry the Potatoes: After soaking, drain the potatoes thoroughly using a colander. Squeeze out any remaining water by pressing the grated potatoes between clean kitchen towels or paper towels. Removing as much moisture as possible is crucial for achieving a crisp texture when frying.
  4. Season the Potatoes: Transfer the dried potatoes to a large mixing bowl. Season them generously with salt, black pepper, and paprika to taste. The paprika adds a subtle smokiness that complements the savory flavor of the Parmesan cheese.
  5. Add the finely chopped parsley and basil to the mixture. These herbs not only add a burst of fresh flavor but also a pop of color to the fritters.
  6. Grate the Parmesan cheese finely and add it to the mixture. The cheese will melt as the fritters cook, adding richness and depth to each bite.
  7. Add the Binding Ingredients: To help the fritters hold their shape, add 2 tablespoons of cornstarch to the potato mixture. Cornstarch acts as a binder and also contributes to a crispier texture.
  8. Beat the egg with a pinch of salt and mix it into the potato mixture. The egg not only helps bind the ingredients together but also adds moisture and richness to the fritters.
  9. Shape the Fritters: Take a small handful of the potato mixture and shape it into a patty, about the size of your palm. Press the mixture firmly to ensure it holds together. Repeat until all the mixture is used up.
  10. For an extra crispy exterior, roll each fritter in breadcrumbs, ensuring an even coating. This step is optional but highly recommended for those who love a good crunch.
  11. Fry the Fritters: Heat a generous amount of vegetable oil in a large frying pan over medium heat. The oil should be hot enough to sizzle when a small piece of the mixture is dropped in.
  12. Carefully place the shaped fritters into the hot oil. Fry them in batches, making sure not to overcrowd the pan, as this will lower the oil temperature and prevent the fritters from crisping up properly.
  13. Fry each fritter for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a spatula to gently flip them halfway through cooking.
  14. Drain and Serve: Once the fritters are golden and crispy, remove them from the pan and place them on a plate lined with paper towels to drain any excess oil.
  15. Serve the fritters hot, garnished with a sprinkle of chopped parsley and a little more grated Parmesan cheese if desired. They can be enjoyed on their own or with a dipping sauce of your choice.
