Orange Oatmeal Nut Cake with Dark Chocolate and Almonds

  • Oranges – 2, juiced and zested
  • Oatmeal – 1 cup about 90g
  • Nuts – 1/2 cup (about 60g), chopped almonds, walnuts, or your choice
  • Stevia – 6 tablespoons or sweetener of choice
  • Coconut flakes – 1 tablespoon
  • Baking powder – 1 teaspoon
  • Orange peel – from 1 orange finely grated
  • Coconut oil – 5 tablespoons about 75ml
  • Oil – for greasing the pan
  • Dark chocolate – 50g, melted
  • Almond flakes – for topping

Method
 

Preparation
  1. Prepare the Ingredients: Juice the 2 oranges and zest 1 of them to get finely grated orange peel.
  2. Chop the nuts finely and set them aside.
  3. Mix Dry Ingredients: In a bowl, combine 1 cup of oatmeal, 1/2 cup chopped nuts, 1 tablespoon coconut flakes, and 1 teaspoon of baking powder.
  4. Combine Wet Ingredients: In another bowl, mix the orange juice, orange zest, 6 tablespoons of stevia, and 5 tablespoons of melted coconut oil. Stir until well combined.
  5. Combine Wet and Dry: Slowly add the dry ingredients into the wet mixture, stirring until evenly combined.
  6. Prepare the Pan and Bake: Preheat the oven to 180°C (360°F).
  7. Grease a baking pan with oil and pour the mixture into the pan.
  8. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Add Dark Chocolate and Almond Flakes: Once the cake is baked, remove it from the oven and let it cool slightly.
  10. Melt 50g of dark chocolate and drizzle it over the top of the cake.
  11. Sprinkle almond flakes over the chocolate.
  12. Serve: Let the cake cool completely before slicing and serving.
