Preparation
- Start by gathering all your ingredients. If the dates are a bit hard, soak them in warm water for about 10 minutes to soften them. This step makes blending easier and helps the ingredients combine better. After soaking, be sure to drain them well.
- Place the pumpkin seeds and walnuts into a food processor. Pulse a few times until they are coarsely chopped. Be careful not to over-process; you want to maintain some texture in the mixture, as this will add a nice crunch to the final product.
- Next, add the pitted dates, dried apricots, and orange zest to the food processor. Blend until the mixture starts to come together into a sticky dough-like consistency. The dates and apricots should be finely chopped and well incorporated into the nut mixture. If the mixture seems too dry, you can add a teaspoon of orange juice or water to help it bind.
- With the mixture ready, use your hands to scoop out about a tablespoon of the mixture and roll it into a ball. Continue this process until all the mixture has been used. You should end up with approximately 12-15 bites, depending on the size you choose to make.
- Spread the sesame seeds evenly on a plate. Roll each of the energy bites in the sesame seeds until they are fully coated. The sesame seeds not only add an extra layer of flavor but also give the bites a nice visual appeal and additional crunch.
- Place the energy bites on a tray or in an airtight container and let them chill in the refrigerator for at least 30 minutes. This will help them firm up and enhance the flavors. Once they’ve set, they are ready to enjoy.
