- Preheat the Oven: Preheat your oven to 170°C (338°F). Grease and line a baking pan with parchment paper to prevent sticking.
- Prepare the Oranges: Juice the 2 oranges and zest one of them. Set the juice and zest aside.
- Mix the Dry Ingredients: In a large mixing bowl, combine 1 cup oatmeal, 2 tablespoons oat flour, 1 teaspoon baking powder, and 1/2 cup chopped walnuts. Mix well.
- Add the Wet Ingredients: Add the orange juice and orange zest to the dry mixture. Stir in 5-6 tablespoons of sweetener or sugar to your taste. If using a liquid sweetener, adjust the quantity accordingly.
- Incorporate Additional Ingredients: Fold in 1 tablespoon of coconut flakes and 6 tablespoons vegetable oil. Mix until the ingredients are well combined and the batter is smooth.
- Bake the Cake: Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center comes out clean.
- Prepare the Chocolate Drizzle (Optional): While the cake is baking, melt 1 chocolate bar (broken into pieces) with 2 tablespoons vegetable oil in a microwave-safe bowl. Heat in short intervals, stirring in between, until smooth and glossy.
- Cool and Drizzle: Once the cake is baked, allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Drizzle the melted chocolate over the cooled cake.
- Serve and Enjoy: Slice the cake into squares and enjoy as a snack or dessert. The chocolate drizzle adds a rich touch, making this cake even more delicious.
