- Preheat your oven to 400°F (200°C).
- Season the chicken breasts generously with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
- Cut a pocket in each chicken breast by slicing lengthwise, being careful not to cut all the way through.
- Prepare the asparagus by trimming and washing it. Place a few asparagus stalks and chopped sun-dried tomatoes on each mozzarella slice, then roll them to create a flavorful filling.
- Stuff each chicken pocket with the rolled cheese and vegetable mixture. Secure the opening with toothpicks.
- Heat olive oil in a cast-iron skillet over medium-high heat. Sear the chicken for 3-5 minutes on each side, until golden brown.
- Transfer the chicken to the oven and bake for 15-20 minutes, or until fully cooked, with an internal temperature of 165°F (74°C).
