Preparation
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust into a 9-inch tart pan and prick the base with a fork. Blind bake for 10 minutes, then remove weights and bake for another 5 minutes until lightly golden. Set aside.
- In a skillet over medium heat, melt butter and sauté the shallot for 2-3 minutes. Add garlic and cook another 30 seconds.
- Add the morel mushrooms and cook until they release their moisture and become golden, about 6-8 minutes.
- Pour in the white wine and cook until most of the liquid has evaporated. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, cream, milk, nutmeg, salt, pepper, and thyme.
- Spread the mushroom mixture evenly over the baked crust, top with Gruyère, then pour the egg mixture over.
- Bake for 30-35 minutes or until the quiche is set and the top is golden. Let cool for 10 minutes before slicing.
