- In a bowl, mix chicken slices with soy sauce and cornstarch. Set aside for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the chicken and stir-fry until cooked through, about 3-4 minutes. Remove from the pan and set aside.
- Add the remaining oil to the pan and stir-fry the garlic and ginger for 30 seconds until fragrant.
- Add mushrooms, snow peas, carrots, bamboo shoots, and water chestnuts. Stir-fry for 3-4 minutes or until vegetables are tender-crisp.
- Return the chicken to the pan. Stir in chicken broth, oyster sauce, hoisin sauce, and sesame oil. Mix well and bring to a simmer.
- Cook for 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.
- Serve hot over cooked jasmine rice.
