Method
 

Baking Instructions
  1. Preheat the oven to 350°F and grease a large bread loaf pan.
  2. Mash ripe bananas in a mixing bowl until smooth, then mix in the eggs until well combined.
  3. Blend in the vegetable oil, granulated sugar, brown sugar, and vanilla extract until incorporated.
  4. Whisk together the dry ingredients in a separate bowl: flour, baking powder, baking soda, salt, and spices.
  5. Combine the dry ingredients into the wet mixture gradually, stirring until just mixed.
  6. Fold in the diced mango gently until evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 45-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
