  • 2 to 3 large overripe bananas
  • 1/2 cup oil vegetable or canola oil
  • 1 large egg
  • 3/4 cup brown sugar adjust to taste
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup walnuts, chopped plus extra for topping

Method
 

Preparation
  1. Preheat the Oven: Preheat your oven to 170°C (350°F).
  2. Prepare the Wet Ingredients: In a large bowl, mash the overripe bananas until smooth.
  3. Add the oil, brown sugar, egg, and vanilla extract. Mix until well combined.
  4. Prepare the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, and salt.
  5. Stir in the chopped walnuts.
  6. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  7. Prepare the Pan: Brush a 7×4 inch loaf pan with oil or butter and line it with parchment paper for easy removal.
  8. Bake the Loaf: Pour the batter into the prepared loaf pan.
  9. Top with additional walnuts if desired.
  10. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool and Serve: Allow the banana loaf to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  12. Slice and enjoy your deliciously moist banana loaf!
