- Prepare the Minced Meat: In a large mixing bowl, combine the minced meat, finely chopped onion, and minced garlic. Mix everything well, ensuring the onion and garlic are evenly distributed throughout the meat. Season with a pinch of salt and pepper to taste.
- Set the minced meat mixture aside while you prepare the batter.
- Make the Batter: In a separate bowl, whisk the egg until it is well beaten.
- Add the kefir to the egg and stir well. Kefir gives the fritters a light and fluffy texture, as well as a subtle tangy flavor.
- Gradually add the flour to the egg and kefir mixture, stirring continuously to avoid lumps. The batter should be smooth and thick enough to coat the minced meat but not too runny. You can adjust the consistency by adding more flour if needed.
- Season the batter with 1/2 teaspoon of salt and mix again.
- Combine the Meat and Batter: Add the seasoned minced meat mixture to the kefir batter. Using a spatula or spoon, fold the meat into the batter until everything is well combined. The mixture should be thick but easy to spoon into the frying pan.
- Fry the Fritters: Heat 2-3 tablespoons of oil in a large frying pan over medium heat. Once the oil is hot, carefully spoon the batter into the pan to form small fritters. Each fritter should be about 2-3 tablespoons of the mixture.
- Flatten the fritters slightly with the back of a spoon to ensure even cooking.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (75°C) if you are using a meat thermometer.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Serve: Serve the minced meat fritters hot, garnished with fresh herbs like parsley or dill for added flavor and color. These fritters pair well with sour cream, yogurt, or a garlic dip. They can also be served with a side of salad, mashed potatoes, or even rice for a more substantial meal.
