Recipe card for Mediterranean Zucchini and Chickpea Salad with Olives and Dill.
Course: Main Course

Ingredients

Ingredients
  • 2 Zucchini, sliced
  • 1 Bell Pepper (Paprika), chopped
  • 1 Onion, finely chopped
  • 200g Boiled Chickpeas or canned, rinsed and drained
  • 10-12 Olives, sliced black or green
  • Fresh Dill, chopped to taste
  • 1 tbsp Lemon Juice
  • Black Pepper to taste
  • Olive Oil 2-3 tbsp or to taste
  • Salt to taste

Method

Preparation
  1. Choose Fresh Ingredients: For the best flavor, choose fresh and firm zucchini, ripe tomatoes, and high-quality olives. Fresh herbs like dill will enhance the flavors of the salad far more than dried ones.
  2. Sauté Zucchini for a Softer Texture: If you find raw zucchini too crunchy, give it a quick sauté in olive oil. Cooking it briefly softens the zucchini while still preserving its bright flavor.
  3. Add Cheese for a Creamy Contrast: For a creamier texture, you can crumble some feta cheese into the salad. The salty, tangy flavor of feta pairs perfectly with the fresh vegetables and chickpeas.
  4. Experiment with Different Herbs: Dill is a classic herb for this Mediterranean-style dish, but feel free to experiment with other fresh herbs like parsley, mint, or basil for a different flavor profile.
  5. Use High-Quality Olive Oil: Since olive oil is a key component of the dressing, opt for a high-quality extra virgin olive oil. Its robust flavor will elevate the entire dish.
