  • 1/2 teaspoon salt to draw out moisture from the cucumbers
  • Bunch of dill, finely chopped adjust the amount to your taste preference
  • 3 cloves of garlic, minced you can adjust this to more or less depending on how garlicky you like it
  • 2 tablespoons lemon juice freshly squeezed for the best flavor
  • 1/2 teaspoon sugar to balance the acidity of the lemon juice
  • 1 tablespoon olive oil extra virgin preferred for its rich flavor
  • Salt and pepper, to taste additional seasoning to adjust the final flavor

  1. Prepare the Cucumbers: Begin by washing the cucumbers thoroughly under cold running water. If you prefer a slightly softer texture, you can peel the cucumbers, but leaving the skin on adds a nice crunch and extra nutrients.
  2. Slice the cucumbers into thin rounds or sticks, depending on how you like to enjoy your snacks. For more uniform slices, consider using a mandoline.
  3. Place the sliced cucumbers in a large bowl and sprinkle with 1/2 teaspoon of salt. Toss the cucumbers to evenly distribute the salt, then let them sit for about 10-15 minutes. The salt will help draw out excess moisture from the cucumbers, making them crisper and helping them absorb the marinade better.
  4. Prepare the Marinade: In a small mixing bowl, combine the minced garlic, finely chopped dill, lemon juice, sugar, and olive oil. Mix well until the sugar is dissolved, and the marinade is well-blended.
  5. Taste the marinade and adjust the seasoning with additional salt and pepper, according to your preference. The marinade should have a balanced flavor of tanginess from the lemon, a slight sweetness from the sugar, and a robust garlicky kick.
  6. Marinate the Cucumbers: After the cucumbers have sat with the salt, drain any excess liquid that has been released from them.
  7. Pour the prepared marinade over the cucumbers in the bowl. Toss everything together until the cucumber slices are evenly coated with the marinade.
  8. Transfer the marinated cucumbers into an airtight container or jar. Seal the container and place it in the refrigerator. For the best results, allow the cucumbers to marinate for at least 2 hours, but they will taste even better if left overnight. This resting period allows the flavors to meld and intensify.
  9. Serve: Before serving, give the cucumbers a gentle stir to redistribute the marinade.
  10. Serve the marinated cucumbers as a refreshing snack, a side dish, or a topping for sandwiches, burgers, or salads. They also pair well with grilled meats, fish, or vegetarian dishes.
