- In a large mixing bowl, combine all-purpose flour, yogurt powder, ground cardamom, and chopped pistachios. Divide this mixture evenly into three portions.
- In one portion, mix in the saffron steeped in milk for the yellow dough.
- In another portion, add freeze-dried mango powder with a splash of milk to achieve desired consistency for the orange dough.
- Roll each colored dough into small balls weighing about 15-16 grams. Combine one of each colored ball to form a cohesive piece resembling a peace sign, then flatten into discs and roll in granulated sugar.
- Arrange the discs on a parchment-lined baking tray. Bake in a preheated oven at 350°F for 14-15 minutes, tapping the tray halfway through. Sprinkle slices of pistachios on top before baking is complete.
- Once baked, let the cookies cool on a wire rack.
