  • 1 teaspoon Ground Cardamom Can be swapped with vanilla extract for a unique twist.
For the Layers
  • 1 gram Saffron Steep in milk for optimal color.
  • 1 cup Granulated Sugar Coconut sugar or jaggery can serve as healthier alternatives.
For the Topping
  • 1/4 cup Chopped Pistachios Can be replaced with walnuts or almonds.

Method
 

Preparation
  1. In a large mixing bowl, combine all-purpose flour, yogurt powder, ground cardamom, and chopped pistachios. Divide this mixture evenly into three portions.
  2. In one portion, mix in the saffron steeped in milk for the yellow dough.
  3. In another portion, add freeze-dried mango powder with a splash of milk to achieve desired consistency for the orange dough.
  4. Roll each colored dough into small balls weighing about 15-16 grams. Combine one of each colored ball to form a cohesive piece resembling a peace sign, then flatten into discs and roll in granulated sugar.
  5. Arrange the discs on a parchment-lined baking tray. Bake in a preheated oven at 350°F for 14-15 minutes, tapping the tray halfway through. Sprinkle slices of pistachios on top before baking is complete.
  6. Once baked, let the cookies cool on a wire rack.
