Ingredients
  

For the Meatloaf Base
  • 1 lb Ground Beef can substitute with ground turkey
  • 1 medium Diced Onion can replace with shallots
  • 1 cup Breadcrumbs use gluten-free breadcrumbs for gluten-free option
  • 1 Egg can use silken tofu as vegan substitute
  • ¼ cup Milk almond milk works as a dairy-free alternative
  • to taste Salt
  • to taste Pepper
For the Cheese Sauce
  • 4 Tbsp Butter can replace with olive oil
  • ¼ cup Flour cornstarch can serve as gluten-free alternative
  • 2 cups Cheddar Cheese mix in Monterey Jack or Gouda for a twist
  • 1 tsp Paprika adjust as desired
  • 1 tsp Dry Mustard adjust as desired

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. Mix the ground beef, diced onion, breadcrumbs, egg, milk, salt, and pepper in a large mixing bowl.
  3. Press the meat mixture into a greased baking dish.
  4. Bake the meatloaf in the oven for 20 minutes.
  5. Cook the macaroni in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  6. Melt the butter in a saucepan, then stir in the flour for about 1 minute to create a roux.
  7. Whisk in the milk gradually until thickened to a creamy consistency, about 2-3 minutes.
  8. Stir in salt, pepper, paprika, and dry mustard. Then add shredded cheddar cheese, stirring until melted.
  9. Combine the cooked macaroni with the cheese sauce, ensuring every noodle gets coated.
  10. Pour the macaroni and cheese mixture over the baked meatloaf layer.
  11. Sprinkle the remaining cheese on top and return to the oven for an additional 25 minutes.
